CAPE GIRARDEAU, Mo., July 16, 2012 — Students at Southeast Missouri State University will enjoy expanded dining services later this fall that will include the opening of the popular Starbucks and Subway to serve the growing University population.
The Beanery Café, currently located in the University Center, is being converted into a retail Starbucks operation. The work is part of a larger renovation project in the University Center that includes rotating the serving area in Smashers Grill and adding a 120-150 seat dining expansion to the south dining room. Work in these areas is under way this summer and will continue into the fall 2012 semester.
Meanwhile, food service also will expand on the north end of campus this fall with the addition of a Subway retail operation in Scully Building in a portion of the former Center for Child Studies. The Center for Child Studies has relocated to Bessie Street and is joining with the University’s Child Enrichment Center. Complementing the Subway will be a coffee concept that also will feature soups and beverages.
Students will be able to use their meal plan and spend “flex dollars” from their meal plans in both new establishments, according to Dr. Bruce Skinner, director of Residence Life. Flex dollars are cash stored electronically on students’ ID cards as part of their meal plan. They can be used at most campus dining locations to buy additional meals, food items, snacks and beverages. Value exchange, which is part of the meal plan, will also be available for use at these venues.
Along with the University Center and Scully additions, improvements will be made in summer 2013 on the north campus to the Towers Complex dining area to expand seating capacity and enhance food service options there.
Kathy Mangels, vice president for finance and administration, said growth of the campus has placed pressure on Chartwells, Southeast’s dining services provider, to address the existing volume and the scheduled opening of a new 262-bed residence hall on the north end of campus in fall 2013. The new residence hall is expected to further stress campus dining capacity, she said. Southeast’s enrollment grew to 11,510 in fall 2011.
Cost of the 2012-2013 capital improvements are estimated at $4.1 million. Southeast will share in the cost of these improvements with Chartwells. Chartwells has agreed to fund $3.34 million with the University contributing $800,000 towards the projects. The University portion includes the cost of the architectural and engineering services contracted directly by Southeast.
Last month, the Southeast Missouri State University Board of Regents approved an amendment with Chartwells for campus dining services to fund these improvements. The amendment outlined Chartwells’ board plan rates for the 2012-2013 academic year that were incorporated into room and board rates approved by the Regents in March. In the amendment, the University also guaranteed a minimum 3,050 residential meal plan participants beginning with the 2013-2014 academic year.
